Summery Salad

Is it still winter where you are?? Atlanta's recent warm weather got me thinking about summer. No more heavy comfort food! I am ready to shed the layers and get ready for the heat. And I want food that reminds me of summer and gets me ready for our pool!

I made this quick salad last week, and I know you will love it too. Do you have a grill? Pretend it's warm out and start that grill up! No grill? George Foreman these bad boys. We like to grill as many veggies as we can so we can reuse them for future meals. 

Recipe:

Veggies-

-fresh spinach

-grape tomatoes

-yellow squash (or zucchini, eggplant, bell peppers)

 

Carbs/Protein-

-canned chickpeas (look for cans that have just chickpeas and salt in the ingredients)

-Trader Joe's Quinoa Cowboy Veggie Burgers

 

Etc.

-olive oil

-salt, pepper, Italian seasoning

 

Directions:

Slice yellow squash long ways and lightly cover with olive oil and spices. (Make a bunch so you have ingredients for several meals for the week.) Grill 'em! Heat veggie burger in microwave or on the grill. Assemble 1 cup of spinach in a large dish, 1/2 cup grape tomatoes, 1/2 cup yellow squash, 1/2 cup chickpeas, and veggie patty for each salad you are making. Drizzle olive oil, salt, pepper, and Italian seasoning over the salad. Add any other vegetables you desire. Looking for more protein? Add a hard-boiled egg or leftover crockpot chicken.

 

YUM! Whatever you don't use can be saved for the next day's salad OR mix with some scrambled eggs for a yummy breakfast scramble OR mix with some pasta for a yummy lunch. SO MANY POSSIBILITIES.
